Everyone’s been already

but I thought I should post it anyways.

Strike me down, for the trends I keep with.

I’m talking about Proud Mary, the other specialty coffee house, you know… in Collingwood. It’s been open for a little over three weeks now and I have had the experience lingering in my mind-tank for a little over a week.  I know, I got lazy and started filling my time with book-reading.  Something that is entirely necessary when you’re burning holes in your head by over-analysing 1780s Australian colonial art in a mad-rush to graduate…but that is another story.

It’s my new Seven Seeds and you know what, they actually have food here (meaning, not a toasted sandwich in the guise of a press machine) as well as a Syphon and a Clover.  I had both, Guatemalan and then a Sumatran coffee, respectively.  Everyone has read about this place already, the staff are young, keen, eager, well knowledged and not assholes who are subsidizing their drug habit (exclusively) by working in hospitality.  Their attitudes and information as well as care will tell you that.  They love it.

I like coffee, I just don’t know much about it.  The Syphon operates pretty much as it sounds; with the two components of the funnel and bowl, the filter sits between them and acts as a valve.  The rest is pretty much as you assume.  With both these coffees, there is considerably more water in it than your average , and only when you allow it to sit (after dropping the temperature slightly in porcelain) and cool down, do the flavours really come out (much like food).  I am told, that with the Syphon, its temperature control hovers around the ninety-one to ninety-two degree mark, whereas with a Clover, the temperature is more easily controlled and a few more degrees here and there can bring out the subtleties of coffee that you cannot taste from a regular espresso machine (not that there is anything wrong with them).

I basically went from the Guatemalan in the Syphon with citrussy, refreshing-yay to a full-forced Sumatran, stinky barn-house coffee (think of it like wine).  I liked it, but many wouldn’t.

Oh, and I ate this for $16.50.

    We’ll probably get there in about six months – it took us ages to turn up to Seven Seeds and it’s right near our house. We’ll never be mistaken for cutting edge.
